Confessions of a Dietitian

Stacy Fisher RD, LDEveryone has at least one memorable cooking experience - some mishap that leaves you laughing hysterically. Mine was the time I prepared pizza burgers - or attempted to, that is. I followed the recipe carefully, and formed each burger into a nice round shape. They seemed a little gooey, but I tossed them onto the grill anyway. A few minutes later, I opened the lid to check on them only to find that the burgers had vanished. The only traces left of them were the burning remnants on the hot coals below. Needless to say, the menu that night quickly changed from pizza burgers to pizza delivery. It still makes me laugh when I think about it. Make sure to add a pinch of humor to every recipe!

Purse Lunches?

If your work schedule frequently forces you to skip lunch or go out to lunch, consider packing a purse lunch - a sack lunch that doesn't require refrigeration or reheating. Lunch at the workplace can be a challenge, especially if you are constantly fighting over the microware or refrigerator space. Whether you're traveling or eating at the office, purse lunches allow flexibility with when and where you enjoy lunch. Below are some sample purse lunches:

  • Peanut butter sandwich on whole wheat bread
  • Cherry tomatoes
  • Granny smith apple
  • Mixed Nuts (almonds, hazelnuts, walnuts, pecans, etc)
  • Whole wheat crackers
  • Carrot sticks
  • Bartlett pear
  • Tuna pouch (packed in water)
  • Whole wheat pita wedges
  • Celery sticks
  • Strawberries
  • Beef jerky
  • Mini pretzel twists
  • Green pepper strips
  • Peach

Recipe: Fruit & Nut Salad

  • Pecans, 1/2 cup, chopped
  • Apple, 1 medium, chopped
  • Celery, 1 strip, chopped
  • Grapes, 1 cup, halved
  • Light Mayonnaise, 2 Tbsp
  • Lemon, juice of 1/2 fruit
  • Mix above ingredients thoroughly.
  • Chill.
  • Enjoy.

Q:  Should I take a multivitamin?

A:  In general, most people do not need to take a vitamin/mineral supplement. A well balanced diet provides all of the known nutrients we need - as well as many other ingredients we are still discovering. In some circumstances, however, synthetic supplements may be necessary. For those who absolutely detest fruits and vegetables, a supplement may be the only way to meet micronutrient needs. Medical conditions, such as anemia, can require therapeutic doses of minerals to correct the deficiency. In addition, some medications interfere with the normal absorption of nutrients, and supplements may be needed. Talk with your doctor or registered dietitian to determine if a supplement may be beneficial. Supplements are highly marketed, and it's easy to see why people have been persuaded to believe that they are essential to good health. Food is nature's ultimate 'natural' remedy. And personally, I think tomatoes are tastier than a Lutein supplement.
